在連續數天的牛肉餐後, 想要吃點簡單、清淡的晚餐來清清腸胃。於是便將冰箱裡的一小把朝鮮薊利用掉...做了此簡單的蕃茄朝鮮薊醬。
材料為:
- 3-4瓣 大蒜, 去皮壓碎
- 1-2條 小乾辣椒 (嗜辣者可將乾辣椒壓或切碎)
- 4顆 新鮮的朝鮮薊 (處理方法請按此 清燉全雞佐朝鮮薊)
- 1 罐義式蕃茄 400公克 (我偏愛小蕃茄品種)
- 少許乾白酒
- 250公克 tagliatelle 寬版義大利麵
1. 將一炒鍋用中火加熱, 加入特級橄欖油、大蒜和乾辣椒炒香
2. 加入朝鮮薊, 繼續炒5分鐘
3. 轉大火, 倒入少許乾白酒煮沸數分鐘讓酒精揮發
4. 加入義式蕃茄罐頭, 醬汁煮沸後加蓋 (半蓋住), 轉小火繼續煮30-40分鐘, 至醬汁縮為一半
使用一大鍋沸騰的鹽水將tagliatelle煮至 al dente (彈牙), 將彈牙的tagliatelle和少許的煮麵水加進醬汁, 拌煮1-2分鐘讓麵條均勻裹覆著醬汁, 趁熱享用。

Simple artichokes & tomato sauce pasta
After a few days of serious meat eating, I wanted to have a light and stomach cleansing dinner. So I used up a small bunch of artichokes in fridge to make this very simple pasta.
Ingredients:
- 3-4 garlic cloves, peeled and crushed
- 1-2 dried chillies (You may crush or chop the chilli if you like it hotter. I kept it intact as my hubby's heat tolerance is not so great!)
- 4 fresh artichokes, prepared

- 1 tin of Italian cherry (or plum) tomatoes (400g)
- a dash of cooking white wine
- 250g of tagliatelle
1. Heat a frying pan over a medium heat, add some extra virgin olive oil, garlic and chilli and fry until fragrant.
2. Add the prepared artichokes and continue frying for 5 minutes.
3. Increase the heat to high, pull in the cooking white wine and let it cook for a few minutes to evaporate the alcohol.
4. Add the tomatoes, bring the sauce to the boil and turn the heat down to a low. Partially cover the frying pan and let it cook for 30-40 minutes or until the sauce is reduced by half.
Bring a large pan of salted water to the boil and cook the pasta until just al dente. Add the pasta (and a little bit of the pasta cooking water) into the sauce and stir for 1 or 2 minutes. Serve immediately.
