還記得當我還在倫敦工作及居住時,曾和一位法國朋友談到,如果有一天自己擁有一家Café,我會在每淸晨起床做新鮮出爐的麵包。然後用這麵包加上自製羅勒青醬、harrisa paste*、和各種口味的自製美乃茲製做出美味又新鮮的三明治。

(註: * harrisa paste是一源自突尼西亞,由Piri Piri辣椒、胡椒或者其它烤辣椒和橄榄油調製而成的一醬糊(paste)。此醬糊(paste)也在其它北非國家廣泛烹調使用。)我這位法國朋友對我說,在法國你可以隨處取得好吃的麵包, 好麵包店不難找。我笑著認同。

我們確實一直能有幸的在離家不遠的麵包店買到品質不錯的棍子麵包(baugettes), 但是幾星期前, 店門上貼了通告說, 因內部整修所以將短暫關閉幾星期。我心想反正我們即將出門度假一個半星期,所以對我們影響應該不大! 但約2星期後發現這家麵包店還是沒開,我們只好先買超市自己烘培的麵包。超市自己烘培的麵包其實也是天天製作,一天出爐約1-2次,但或許是已經被傳統麵包店養的嘴巴越來越挑,總覺得超市製作的麵包缺少慢速低溫發酵的麵包所擁有的麥香。

在買不到自己喜歡的麵包的狀況下,我想起曾經在YouTube上看過一短片, No Knead Bread 免揉麵包(請按此連結 http://www.youtube.com/watch?gl=HK&hl=zh-TW&v=13Ah9ES2yTU)。

因之前並無非做不可的動機,一直沒試做過,現在我決定做做看。

因為此食譜非出於我自己,所以在此只分享自己實驗後的圖片。

製作過此免揉麵包後感想: 過程超乎想像中簡單,但成品卻足以和專業麵包媲美。下一次再做麵包時,我想嘗試加入有機穀物製作出有機雜糧麵包。

I remember having a conversation with a French friend once when I was still working and living in London.  I told him if I had a cafe, I would get up early in the morning to make my own fresh bread, my own pesto, harrisa paste, mayo infused with different flavor and etc; all for making a delicious and fresh sandwich everyday.  He replied to me, you don't have to make your own bread in France!  There are plenty of good boulangerie (bakeries) who can make bread for me.  I laughed, but he was right.

We have been getting some real decent baugettes from a boulangerie (bakery) nearby, but a few weeks ago they put up a note saying they would be closed for renovation.  We happened to be away for holiday so it did not bother us that much but they were still not opened after 2 weeks of temporary closure.  So we had to buy our bread from those hypermarkets but their bread (not so bad, honestly...it's just that I am getting more and more difficult!!) seems to be tasteless to me.  Personally, I prefer bread being made using traditional methods and the bread dough being proved very slowly and naturally.  

I always remember seeing a video clip from YouTube, No Knead Bread.

I did not have a motive to give this thing a try back then but now I have one!

After giving it a try, I have to say it is really that easy and the result is quite outstanding!  I might try mixing in some multi-grains next time!
