我愛普羅旺斯的夏天, 有著吃不完的水果; 每次走進廚房就可聞到白、黃油桃與哈蜜瓜熟成的果香。昨天又拿出了製冰機來玩, 這一次的成品是哈蜜瓜雪酪...再熱的天也不怕!!

1.2 公斤 熟成哈蜜瓜(果肉淨重)
150 公克 特細砂糖
300 ml 清水
75 公克 蜂蜜

1.  將砂糖、蜂蜜、清水放入鍋中, 以中小火並攪拌至砂糖完全溶解並煮沸

2.  煮滾後轉小火, simmer 小滾5分鐘
(* simmer小滾: 可以看到鍋底小泡持續上升, 像香檳般)
3.  將糖漿離火於一旁放涼
4.  將哈蜜瓜果肉打成泥並放於一乾淨的大碗中

5.  將冷卻的糖漿加入果泥中

6.  倒入製冰淇淋機, 按使用說明將雪酪打至綿柔 (視各品牌、機種的使用方式而異)

7.  裝入冷凍盒, 冷凍至你喜歡的硬度即可

可以灑上一些薄荷絲增添更清涼的口感

English Version:

Homemade melon sorbet

I just love summer!  Heaps of fruit in the market and I have been feasting on all stone fruits and melons!!  Here is another idea of my sorbet collection, homemade melon sorbet!  Perfect for a warm summer day!

1.2 kg ripened melon flesh
150g fine caster sugar
300 ml water
75g honey

1.  Put the sugar, honey and water in a saucepan and stir over medium low heat, until the sugar has dissolved and bring it to the boil.
2.  Once boiled, turn the heat down and let it simmer for 5 minutes.
3.  Remove from the heat and set aside to cool.
4.  Puree the melon flesh and pour into a large mixing bowl.
5.  Add the cooled syrup and mix well.
6.  Churn in an ice cream machine until creamy.
7.  Scoop into freezer container and freeze until firm.

Serve with some finely shredded mint for an extra clean and refreshing taste!
